It’s mid-July, the weather is heating up, and all we want for dinner is salad. It’s just too darned hot for anything else. We’ve been making all of our summer favorites, but I thought it would be fun to try something new. So I thought today, we’d look at a few interesting twists on classic salads that I can’t wait to try. They run the gamut from healthy to un, but they all look fantastic to me!

Epilogue: thus far, we have made the salmon nicoise and the roasted asparagus and goat cheese. They were both magnificent!

      • We had the Salmon Niçoise Salad tonight, and it was fantastic! Next time I would halve the shallots, but otherwise, perfection.

      • Mmmm -sounds yum – and now that you mention it – I realize I have not had shallots in a while – oh and yesterday we had a unique version of a watermelon chicken salad –

      • That sounds amazing! Would love the recipe is you want to share (I will only be eating salads until further notice: the weather said it felt like 99 degrees today, and I didn’t disagree.)

        and my husband usually makes one large salad a day
        Funny story was he got the idea from Mark’s Daily Apple and for the longest time I thought it was called a “Big “S” Salad” – but it was big ass salad – hahaha

        so his daly salads vary according to what is available – sometimes we grow a few veggies –
        but the salad base can be anything from arugula to spinach to spring mixes
        then he makes a great balsamic and vinegarette dressing – we keep a variety of nuts around and so anything from pumpkin seeds, walnuts, and toasted almonds Then we love chicken thighs and usually have those pre-cooked – add some pieces of chick, avocado often, berries (right now we are getting some wild – there is a field two miles from here – that is work but also fun to forage)
        or frozen thawed berries – and then recently – cubes of watermelon – mmm
        so it has texture, church, tart, smooth, crunchy, acidic, etc.
        I will try and remember to come back and share a photo of one of his salads…

        goodness – I sure did ramble – I guess salad can be so exciting – esp with the heat

  4. I love eating salads in the summer and I love to throw fruit into the mix. I have actually been craving a fig caprese salad and have my fingers crossed I will be able to snag some figs this year.

  6. I try to have at least one salad every week. I love salads. I will try a few in the today’s post. I do have a new Fig tree in my yard now. Hope to have a crop next year. Hal
