When I saw the first video below entitled “I am getting better at editing,” I had no idea what to expect. Then I watched as four copies (?) of the same woman (inexplicably wearing elf ears) assembled a 5-foot-high cake and chocolate creation. I was amazed at the work and patience and skill that went into making this masterpiece. There’d need to be a lot more than just four of me to make something so impressive. This is the marvelous confectionary work by Vancouver-based Ksenia Penkina. Known as the Glazing Queen, she is passionate about sharing her mastery and process. She teaches classes both online and in person, and some of the best-known bakers in the world have taken her courses.
And Penkina hasn’t just been working in the artistic confection creation and teaching space. She’s also put her name on a series of mirror glazes and high-intensity food colors for home bakers and chefs.
