
A few years back, I had the idea to pull together a list of quick-to-prepare but healthy breakfasts to either make or grab and go on busy school (or work) mornings. I wanted to find some easy options beyond just avocado toast and smoothies. However, life got in the way, so the post never came to fruition. I thought it was time to give it another shot…
- Cranberry Cheesecake Overnight Oats – I have never been a fan of oatmeal, but I might have to try this…
- Healthy Banana Bread – I have never met a banana bread that I didn’t love.
- Roasted Vegetable & Turkey Breakfast Hash – There’s nothing greasy in here, so it can be made on the weekend and eaten cold or just warmed all week!
- Baked Oatmeal – This is made ahead of time, either in a pie dish or in muffin tins.
- Breakfast Quesadillas – These can be made ahead, then frozen. They heat up quickly in a skillet for a satisfying breakfast!
- One-Bowl Muffins – You can make a number of different varieties at one time, perfect for a picky family!
- Chia Seed Pudding – I know it may sound a bit off-putting, but it’s actually delicious, and packs tons of protein and fiber!
- Healthy Egg Muffin Cups – Full of vegetables, these are a great start to the day!
- No-Bake Breakfast Cookies – They had me at ‘cookies’!
- High-Protein Breakfast Wraps – These can be made ahead of time and stored, pre-cut, in the fridge.
